Led by co-owners Johnnie, Toby, Luke and Oran, St Barts is currently the only restaurant in London to hold both a Michelin Star and a Michelin Green Star, setting a new benchmark for sustainable fine dining in the city.
Everything here is intentional. From the tableware to the ingredients, St Barts is a celebration of what can be grown, made, designed and cooked within the British Isles. Their tasting menu highlights producers across the country, but their approach extends far beyond the plate: the interiors, ceramics, woodwork, and design have all been shaped by a commitment to locality and environmental responsibility.

A Space Built on British Craft
St Barts’ dining room is a masterclass in considered, sustainable design. The space feels minimalist yet warm, rooted in natural materials sourced exclusively from within the UK. The wooden tables are crafted from British-grown timber, and even the side tables, designed specifically for guests’ handbags, are made from fallen London trees. The ceramics are locally produced, some of them even thrown by Luke, one of the restaurant’s co-founders.
Every detail has a story. The muted colour palette and architectural simplicity take inspiration from their extraordinary neighbour: St Bartholomew’s, London’s oldest surviving church, standing for over 1,000 years just outside their windows. The result is a dining room that feels grounded, modern, and distinctly British - an environment that echoes the philosophy behind the menu.
In the Kitchen: British Ingredients, Calm Precision
Move into the open kitchen and the philosophy becomes even clearer: everything served at St Barts is British. Nothing is imported. Instead, the team sources from regenerative farms, small-scale fishers, and producers across England, Scotland, Wales, and Northern Ireland, showing what’s possible when you commit fully to a local supply chain.
The kitchen itself is refreshingly calm. There’s no hierarchy, no shouting, no intensity for the sake of theatre. Johnnie, the head chef, talks often about “letting the produce speak for itself”, and watching the team work makes that philosophy easy to understand. High-quality ingredients drive every decision; technique is there to support, not overshadow. Guests sitting nearby can watch the entire process unfold, an open invitation into St Barts' quiet confidence and respect for the ingredients they cook with.

St Barts’ dishes feel like an ode to the landscapes and producers across the British Isles.
